There’s a special kind of joy in taking simple, affordable ingredients and turning them into something that feels like a treat. As a single SAHM, stretching a dollar isn’t just a skill — it’s how I get to spend more time with the person who matters most to me, my 8-year-old son, October. Every dollar I save in the kitchen is a dollar (and a minute) I get back for him.
Cooking and baking has always been my love language — the way I show up for the people I care about. So if you ever invite me over, don’t be surprised if you find me closer to the kitchen than the couch, elbow-deep in something for someone I love. Today, that “something” is this loaded poutine: crispy shoestring fries, smothered in rich gravy, topped with melty cheese, sautéed veggies, and chopped chicken. Restaurant-worthy, without the restaurant price tag.
A Pinch of Scripture
Every recipe we share carries a little seasoning for the soul, and today it’s fitting that our key ingredient is salt.
“You are the salt of the earth. But if the salt loses its saltiness, how can it be made salty again? It is no longer good for anything, except to be thrown out and trampled underfoot.” — Matthew 5:13
Salt was precious in the ancient world — it preserved, it purified, it flavored. Jesus used it as a picture of what disciples are meant to be in the world: a small but essential presence that brings out the best in everything around it. Just like a pinch of salt transforms a bland dish into something flavorful, a life seasoned by faith brings flavor, preservation, and purpose to the people around it.
As you season this dish, let it be a reminder: raising disciples isn’t about being loud or elaborate — it’s about being consistently, faithfully present, adding flavor to the lives around you one small act at a time.

Why This Recipe Works on a Budget
This dish leans on a few affordable staples — frozen shoestring fries, a jar of gravy, pantry seasonings — and dresses them up with fresh veggies, a mix of cheeses, and leftover chicken. The result looks and tastes far more expensive than it actually is.

Poutine Recipe: Better Than Restaurants-Budget Friendly
Ingredients
Equipment
Method
- Slice the onion and mushrooms, then sauté both together in a small saucepan until softened. Set aside.
- In a bowl, toss the frozen shoestring fries with about 1/2 tbsp vegetable oil, then season with garlic powder, Cajun spice, and salt.
- Spread the fries on the air fryer rack and cook on the fry setting for 10 minutes.
- While the fries cook, halve the cherry tomatoes and set aside.
- In the same saucepan used for the onion and mushrooms, melt about 1/2 tbsp butter. Add roughly 1 tbsp of the Club House gravy powder (adjust to taste — you don’t need the whole package for one serving).
- Whisk in a little water at a time, gradually adding more until the gravy reaches your desired consistency — thicker or thinner, your call.
- Stir half of the sautéed onion and mushroom mixture into the gravy. Keep the rest aside for topping.
- By now the fries should be done — pull them from the air fryer and plate them.
- Pour the gravy (with the onion and mushroom mixed in) over the fries.
- Immediately top with the mozzarella cheese so it melts slightly from the heat, then add the feta on top.
- Add about 1 tbsp of sour cream.
- Finish with the cherry tomatoes, chopped chicken finger, and the remaining sautéed onion and mushroom on the side.
- Serve with avocado slices on the side, if using. Enjoy!
