I prefer to use my air fryer over my oven whenever I can help it, mostly because my oven has become storage for my pots and pans. I know, I know — apparently that’s a New York thing, but honestly it’s an East Coast thing, and it’s been happening in kitchens like mine long before anybody put a name to it. So when I want dessert, I’m not thinking sheet pan. I’m thinking one bowl, one appetite, one air fryer basket.

That’s exactly where this one came from. October had already claimed most of the apples out of the bag before I even got to slicing (his favourite season arrived and he knows it), so I was down to one good apple and a small, sad handful of blueberries left in the fridge. Instead of running to the store, I just let the blueberries fill in for the apple I didn’t have. Turns out that was the better dessert anyway.

Wait — Is This Crisp or Crumble?
I’ve said before that crisp and crumble are the same thing, but the truth is a true crisp gets its topping from oats and butter. And a true crumble gets its topping from flour and butter. Two different textures, two different names, and yes — two different regions arguing about which one is correct.
This recipe doesn’t pick a side. It’s mostly oats with a little flour worked in, which is what gives you that crackly, crisp top with a soft, chewy give underneath. Crispy on top, chewy in the middle, gone before you’ve finished the bowl.

Apple Blueberry Crisp for One (or Split in Two)
This is portioned for a single oven-safe ramekin or soup bowl — perfect for a dessert for one, or split it down the middle if you’re sharing. I make mine in the air fryer because that’s where my oven duties have gone, but a regular oven works exactly the same.
Full ingredients and step-by-step instructions are in the recipe card below. A couple of notes before you get started: sauté the apple and blueberries just long enough to soften them, not long enough to turn them to liquid. And whatever setting you use on the air fryer, make sure it’s the bake function — not the protein setting, not the fries setting. Don’t add water to this one either; the fruit releases its own liquid as it bakes, and that’s exactly what you want.

What Each Ingredient Is Doing for You
I don’t do a lot of takeout in this house — me and October keep it down to once a month, if that — so I’m always thinking about what an ingredient is actually giving us, not just how it tastes.
- Apple — a solid source of fibre and vitamin C, and most of that fibre sits right in the skin, so I don’t peel too aggressively.
- Blueberries — one of the higher-antioxidant fruits out there, particularly the anthocyanins that give them their colour, and they bring their own vitamin C and vitamin K along for the ride.
- Cinnamon — has natural anti-inflammatory and antioxidant properties, and some research points to it helping the body respond better to sugar, which is a nice thing to have in a dessert.
- Vanilla extract — carries its own antioxidant compounds, and the scent alone has a calming effect, which is half of why a splash of it makes a dish feel like more.
- Oatmeal — a good source of soluble fibre (beta-glucan specifically), which supports heart health and keeps you fuller longer than a straight flour topping would.
- Butter — mostly here for flavour and texture, but it does carry some vitamin A.
- Salt — a pinch does real work sharpening the sweetness, which is why you’ll notice this recipe uses it twice.

- Fruit filling:
- In a pan over low-medium heat, add the chopped apple, blueberries, butter, and pinch of coarse salt. Sauté about 3 minutes, just until softened.
- Sprinkle in half the sugar mixture (1 tbsp white sugar, 1 tbsp brown sugar, 1/2 tsp cinnamon) and the second pinch of salt. Cook 1 more minute, until the sugar melts in.
- Transfer to your ramekin or soup bowl. Add a small splash of vanilla on top.
- Crisp crumble:
- In a separate bowl, combine the oatmeal and flour with the remaining half of the sugar mixture (1 tbsp white sugar, 1 tbsp brown sugar, 1/2 tsp cinnamon).
- Cut in the butter and work together by hand until crumbly. Add a little more flour if too wet, or more oats for extra crisp.
- Sprinkle the extra 1/2 tsp cinnamon over the crumble and mix through.
- Spoon the crumble over the fruit, filling the ramekin to the top.

A Pinch of Scripture
There’s a reason apples show up in Scripture as a picture of comfort, and I think about that every time I make a single-serving dessert like this one.

That’s a strange verse to sit with until you notice what it’s actually asking for. Not a feast, not a crowd around the table — just something sweet, something small, brought close when the heart is worn thin. Sometimes what we need isn’t more, it’s just something. A ramekin of apples and blueberries, warm out of the air fryer, still counts.
So if tonight’s version of comfort is a dessert made for one, that’s not a lesser portion. It’s the same comfort Scripture already named — just sized for where you actually are.
