Blueberry Apple Crisp Crumble

Ingredients
  

  • For the fruit filling:
  • 1 apple peeled and chopped
  • 1/2 cup A small handful of blueberries
  • 2 tsp butter
  • Pinch of coarse salt
  • Half the sugar mixture 1 tbsp white sugar, 1 tbsp brown sugar, 1/2 tsp cinnamon
  • Pinch of salt
  • A splash of vanilla extract
  • For the crisp crumble topping:
  • 1 cup oatmeal
  • 1/2 cup flour
  • Remaining half of the sugar mixture 1 tbsp white sugar, 1 tbsp brown sugar, 1/2 tsp cinnamon
  • 2 tbsp butter
  • 1/2 tsp cinnamon extra, for the top

Equipment

  • 1 Pan
  • 1 Soup Bowl/ ramekin
  • 1 Mixing Bowl
  • 1 Spoon

Method
 

  1. Fruit filling:
  2. In a pan over low-medium heat, add the chopped apple, blueberries, butter, and pinch of coarse salt. Sauté about 3 minutes, just until softened.
  3. Sprinkle in half the sugar mixture (1 tbsp white sugar, 1 tbsp brown sugar, 1/2 tsp cinnamon) and the second pinch of salt. Cook 1 more minute, until the sugar melts in.
  4. Transfer to your ramekin or soup bowl. Add a small splash of vanilla on top.
  5. Crisp crumble:
  6. In a separate bowl, combine the oatmeal and flour with the remaining half of the sugar mixture (1 tbsp white sugar, 1 tbsp brown sugar, 1/2 tsp cinnamon).
  7. Cut in the butter and work together by hand until crumbly. Add a little more flour if too wet, or more oats for extra crisp.
  8. Sprinkle the extra 1/2 tsp cinnamon over the crumble and mix through.
  9. Spoon the crumble over the fruit, filling the ramekin to the top.
